Pad Thai (egg wrap) Recipe!

Ingredients
serves 5
3/4 pack (337g) soaked flat rice noodles (pad Thai noodles) (soak noodles in water 1 hour)
20 peeled and deveined large shrimps (4 per each serve)
12 eggs (will need only 2 eggs if don't want to do egg wrapping)
1 cup (2-inch) garlic chives or green onion
2 cups fresh bean sprouts
1/2 cup cut firm tofu (no need if you don't like)
1 1/2 tablespoons fish sauce
1 tablespoon vegetable oil
1/4 cup crushed peanuts
5 tablespoons shrimp paste (optional)
5 tablespoons Pad Thai paste
1 cup water

Serve with (if want)
lime wedge
crushed red hot pepper
crushed peanuts
sugar
fresh garlic chives
fresh bean sprouts
banana blossom

Directions
Pad Thai
1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add 2 eggs and scramble lightly. Add 5 tablespoons shrimp paste, 5 tablespoons Pad Thai paste, 1 1/2 tablespoons fish sauce, 1/4 cup crushed peanuts, 1/2 cup cut tofu and shrimps. Stir-fry until shrimps almost done. Add 3/4 pack rice noodles and 1 cup water. Stir-fry until firm but tender. Add 2 cup fresh bean sprouts, 1 cup (2-inch) garlic chives. Stir-fry 1 minute.

Egg wrap
Beat 2 eggs. Pre-heat another flat non-stick pan over medium heat and spray oil. Pour the beaten egg on the pan then swirl the pan around and around till egg coats all over the bottom of the pan thinly and cooked. Turn off the heat and place the Pad Thai into the middle of the egg and wrap the Pad Thai by the egg then place it on a severing dish.

If you want to make your own PadThai sauce, here is the recipe!
6 tbsps tamarind paste
1/2 cup palm sugar
2 tbsps oil
10 minced garlic
2 minced shallots
1 tsp salt
1/2 tbsp dried crushed Thai chili
1/2 cup water
>start by adding oil, garlic, chili, and shallot together in a saucepan with low-medium heat, then add sugar, tamarind, then water and simmer for 10 minutes

* may decorate by coriander and red pepper 
**  1 pack/450 g rich noodles (A Taste of Thai) from Safe Way
*** all ingredients can be found at T&T Supermarket, Lucky Supermarkets, and Hong Kong Food Market or any Asain market
**** may put more any ingredients if like
